Friday was a rainy day so I decided to bake and ice some sugar cookies :)
Dark chocolate sponge, chocolate chips, baked cheesecake and cream cheese icing. These cupcakes are quickly becoming one of my favourite treats! My cousin bought me The Hummmingbird Bakery Cookbook when I was visiting her in England in December. I hadn’t even been back in South Africa for 24 hours and I was already in the kitchen trying out some of their recipes. These Black Bottom Cupcakes are so easy to make and very tasty!
If you are visiting London then Borough Market is a must. We went rather hungry and found it quite a challenge choosing lunch. There is such a large selection from paella to gourmet chicken wraps or the more traditional pork belly sandwiches or a hearty pie. I settled on a lamb and mint burger which was probably one of the best burgers I have ever eaten. There is also a huge selection of sweet treats, pastries, cheeses, fruit and drinks. Definitely a highlight of our trip.

This December my family and I enjoyed some red velvet cake instead of the usual Christmas cake. Quite nice to have a change :)

My absolute favourite place to go and have coffee in Cape Town. Twigs in Kenilworth. Great coffee, nice gifts and illustrations, Jane’s delicious chocolate tortes (I may be slightly biased here), chilled vibe and some plants if you’re into gardening.

Delicious and easy puddings are the best. And especially puddings that have to be said with some sort of accent like this one. I feel it just asks to be said with a posh accent like ‘flaaaan’. Anyway enough of that. There is no way you can mess up this recipe. Super easy and so tasty.
ingredients
the base:
113 g digestive biscuits.
57g butter (2 oz)
1 level tsp castor sugar
the filling:
150 ml double cream
170 g condensed milk (6 oz)
2 large lemons
1. Crush digestives with a rolling pin.
2. Melt butter in a pan, add sugar and blend with biscuit crumbs.
3. Mix well and press into a 7 inch pie dish.
4. Bake for 8 mins
The filling:
1. Mix cream, condensed milk and grated lemon rind.
2. Slowly beat in the lemon juice.
3. Pour mixture over base and into flan case & chill for a few hours.
